Although one might be tempted to create a cocktail out of this trendy liquor, the bartenders over at the Ivar opt to serve it the traditional way—straight.

1 ounce absinthe in old fashion glass
1 sugar cube

Put absinthe spoon over top of glass. Place a sugar cube on top of spoon. Light sugar cube on fire. Slowly pour cold water over flaming sugar cube then enjoy.
