Blueberry Heavenly Mortini
If you were a fan of Top Chef’s molecular gastronomist Marcel, then you’ll dig this drink. Sure, there are the expected fancy ingredients (Stoli Blueberi vodka, triple sec, DaVinci blueberry syrup), but it’s the foam made with egg whites, Grand Marnier and passion fruit puree that makes this drink heavenly.

-3 oz. Stoli Blueberi vodka
-1 oz. triple sec
-1 oz. DaVinci blueberry syrup
Shake, then strain into a chilled martini glass
Ingredients for Heavenly Foam
-4 oz. Pasteurized egg whites
-3 oz. Grand Marnier
-4 oz. Passion fruit puree
-4 oz. Sweet and sour
-Juice of 1/2 lime
Pour all ingredients into foamer. Close the lid and add charge. Shake vigorously for 5 seconds. Yields to top 6-7 cocktails.
