'New Way' Dirty Martini

The martini is garnished with a faux olive, a green sphere with a thin membrane designed to explode in your mouth. Chef Michael Voltaggio explains the technique as “injecting olive juice and calcium chloride into a sodium alginate bath.” Huh? The martini is also topped with "olive brine air" (a really light foam).
