Splashy celebrity-driven kitchens—the newbies

An eye on: hotel dining
Good-looking revolutionaries at Bond Street (Credit: Lori Shepler)
Bond Street
Room: Thompson Beverly Hills
Chef: Hiroshi Nakahara flew the coop from the original Bond Street NYC.
Scene: “Good-looking revolutionaries” and grown-up child actors in an Asian-inspired mod setting poached from New York.
Cuisine: Exorbitantly priced sushi, bells-and-whistles specialty rolls and fusion entrees.
Locals-to-guests ratio: 90/10
What’s the view: Rolls, Benzes and Ferraris whipping by on Wilshire.
Valet tariff: $7 with validation
Amenities: A limited menu is available in the swanky lounge upstairs. Come mid-March, look for the opening of the rooftop area, which will include poolside and cabana service.

Tracht’s
Room: Renaissance Long Beach
Chef: Jar’s Suzanne Tracht headed due south to open “just another”—but first namesake—restaurant.
Scene: Hotel guests mingle with the business-lunch and symphony-going sets.
Cuisine: Classic Tracht, replicating her modern chophouse trademarks: pot roast, Kansas City steak, french fries and crab devilled eggs.
Locals-to-guests ratio: 50/50
What’s the view: You can sort-of see the Aquarium of the Pacific—and with the open setup, everyone on the second floor can see you.
Valet tariff: Free valet with validation
Amenities: The outdoor area keeps you cozy with heated floors and a roaring fire pit. You can also eat at the bar.

Bar Marmont
Room: Chateau Marmont
Chef: Renovations began in the kitchen when Carolynn Spence and her impressive tats were wooed from the Spotted Pig in New York.
Scene: New Hollywood getting their late night grub on before heading over to more infamous escapades promised at the Chateau.
Cuisine: Gastropub small plates like boozy bacon-wrapped prunes and a “damn good burger,” balanced with substantial dishes like sheep’s-milk ricotta gnocchi and cider-braised pork shank.
Local-to-guests ratio: Hard to pin down—are movie stars locals or guests?
What’s the view: Sunset Blvd., and plenty of underage and over-age celebrities.
Valet tariff: $18 (Really.)
Amenities: Bar Marmont isn’t actually in the hotel; it’s adjacent on the property. So there are fewer bellhops to be had.
