After Californizing Indian cuisine with more vegetables and less ghee at the acclaimed Bombay Cafe, chef Santokh Singh has opened his own trio of Southern California restaurants. This new venture is named "All India" because its menu spans the subcontinent - tandoori meats from the north, dosas from the south, paneers and dals from the east. This is everyday Indian at its best, with plenty of homestyle curries and a moderate level of spice that leaves tastebuds intact and happy at the end of the night.
