It was only a matter of time before self-taught Chef Sugiura-san, founder of the California Sushi Academy, opened his own sushi restaurant. Located along Sawtelle's Little Osaka, the pistachio-hued cottage is the new digs for Academy chefs to strut their sushi expertise. Snag prime seating on the front patio by the amazing firepit and try the marinated snail sashimi paired with a shot-size glass of vinegar and mozuku (seaweed).
