The tenderest greens

The very backbone of the Tender Greens endeavor, the majority of leafy greens comes from Scarborough Farms, located about 60 miles away in Oxnard. It’s the “extraordinary farm” that takes pride of place in the restaurant’s edited menu of salads and bigger salads. The independent grower is not only committed to producing the best-tasting products, but to employing farming methods that are equally tender to the Earth, including letting fields run fallow to naturally regenerate the soil. Scarborough Farms is organic, but not certified organic, due to financial reasons. (Don’t get us started on that quagmire.) Info: www.scarboroughfarms.com
