Raw amberjack, white peach, serrano chili

Only a stellar dish could turn our attention from a menu ecstatically laden in bacon fat—and this one did. Amberjack, obviously the freshest of the moment, is hacked into robust, pink-fleshed cubes; it’s obvious this has nothing to do with the discipline of sashimi or the precision of Nobu. The fish is tossed with ripe white peach, a bright splash of citrus and mini coins of serrano chili for contrasting heat. The result is a plateful of summer at its peak. Get it before the season’s end takes it away.
