Spain's tapas tradition began when King Alfonso X ordered that all bars serve small bites of food along with their libations. Today, half a world away in the San Fernando Valley, Olé! Tapas Bar is keeping his mandate alive with tasty nibbles, beverages, murals of bullfighters and Tuesday night flamenco singers and dancers. Plates—ranging from halibut in lychee sauce to a snail and chorizo casserole—complement pitchers of sangria, beer, cocktails and wine from California, Argentina, Chile and Spain. And for those who overindulge and live within an 8-mile radius, the restaurant will provide transportation home.
